Happy Hump Day! It's time for another Pinspiring Wednesday!
Last week I made some delicious boyfriend-approved Zucchini Brownies. Now that Fall is right around the corner I've been wanting to make something with pumpkin. Lucky for me, Pinterest is exploding with delicious looking pumpkin recipes.
Pumpkin Apple Oatmeal Muffins

The original recipe called for a few ingredients that I don't keep on hand (Coconut oil and coconut milk) so I made a few alterations. I also added a cup of pumpkin puree instead of apple sauce.
Pumpkin Apple Oatmeal Muffins |
Ingredients
- 1 1/4 cups whole wheat flour
- 1 1/4 cups oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon of nutmeg
- 1 teaspoon ginger
- 1 cup pumpkin puree
- 1/2 cup 1% milk
- 1/2 cup brown sugar
- 2 tablespoons oil
- 1 large egg
- 1 teaspoon vanilla
- 2 gala apples cut into small pieces
Instructions
- Preheat oven to 375 degrees.
- Combine flour, oats, baking powder, baking soda, salt, cinnamon, nutmeg and ginger.
- In another bowl (or the same bowl if your forget like me) combine pumpkin, milk, sugar, oil, egg and vanilla.
- combine both bowls and mix well
- Fold in the chopped apples. Fill muffin tins.
- Optional: sprinkle with sugar
- Bake for 16-18 minutes.
- Mine made 18 muffins (approximately 110 calories each)
Overall, I thought they were pretty tasty. I think I would add more spice next time, perhaps allspice? They make good breakfast muffins or something to eat before a workout :)
I love anything pumpkin and these look delicious! I may have to try to make these sometime soon!

No worries lady! There's so many muffin recipes out there and I adapted mine from another as well :)
